In Val di Fiemme, everyone knew the butcher Tito Braito. His name was associated with an exquisite speck, the recipe for which remains a secret to this day, even though il Maso di Tito Speck in Daiano (a fraction of Ville di Fiemme) has turned into a renowned agritourism, despite the fact that 12 Tito Speck sales points have already opened in Trentino - Alto Adige.
Tito's fame is indisputable, but the secret is carefully guarded. To this day, we only know that the speck is slowly aged, for 10 to 12 months, in the pure and fresh air of the Dolomites, to ensure a delicate and authentic taste. A very balanced mix of natural flavors and spices is used for salting and flavoring. It is the beech wood that gives the speck its characteristic aroma during smoking.
In a blind tasting organized by the renowned magazine “Gambero Rosso”, the speck “Tito Speck Riserva” won 2nd place among the best 120 artisan Italian specks.
The company is still managed by the Braito family. As Tito's granddaughter, Maddalena Braito, explains, the flagship product is the Tito Speck Riserva - Filiera Nazionale, made with legs of Italian pork. This product, with its delicate and extremely controlled taste, is the result of slow aging and gentle smoking. The long and rigid production process concludes with a careful examination of quality standards, thanks to a meticulous analysis of organoleptic and olfactory characteristics.
In summer, the outdoor tables of the agritur allow guests to overlook the surrounding meadows frequented by the animals of the farm. Here, in addition to the traditional family speck, they produce smoked fesa, salamis, smoked salamis, pancetta, smoked pancetta, würstel, kaminwurzerl, shank, guanciale, coppa, and fesa speck. The Fiocco with alpine herbs, deer ham, and carne salada are also appreciated.
Among the specialties to taste at the Agritur are canederli, polenta, gulasch, and sauerkraut, accompanied by Trentino wines and Birra di Fiemme produced in Daiano.
Il Maso Tito Speck is part of the product club Tradizione e Gusto of the ApT Fiemme and Cembra and houses a shop where, in addition to cold cuts, gastronomic specialties from the area are on sale. From honey to jams, from local cheeses to oil, to dried mushrooms and biscuits. Also wines, beers, grappas, infusions, teas, sauces, preserves, and mustards. The shop is a true treasure trove of local excellence able to reveal the tastes and traditions of Val di Fiemme and Val di Cembra, with a view to the entire region.
Visiting it is undoubtedly a sensory experience that remains etched in memory. The alpine design of the packaging also plays its part, so much so that the farm's wooden crate is one of the most coveted and sought-after Christmas gifts. Tito Speck's cold cuts are also sold in the dairies of Predazzo and Cavalese and are distributed to agriturismos and malghe in Trentino, in prestigious gastronomic shops, and in many Italian restaurants.
